Instructions

1. Prep and boil potatoes
Peel and quarter your potatoes. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15 minutes.

2. Season and sear steaks
While potatoes are cooking, pat steaks dry. Season both sides with salt, pepper, and a little garlic powder if you like. Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear steaks 4-5 minutes per side for medium rare (adjust time for thickness and doneness). Remove steaks and let rest.

3. Cook asparagus
Add 1 tbsp olive oil to the same skillet, toss in asparagus, season with salt and pepper, and cook for 3-5 minutes until tender-crisp. Or roast at 425°F for 10-12 minutes if you prefer.

4. Mash potatoes and plate up
Drain potatoes and mash with 2 tbsp butter and milk until creamy and smooth. Serve steaks with asparagus on the side and sprinkle fresh herbs if you have them.
