I’m not great in the kitchen. I panic when stuff starts boiling. But this recipe? I’ve made it at least ten times, and every single time, my spouse looks at me like I’m a wizard. No fancy moves, just throw things in a pan and bake it.

Ingredients (serves 3-4)

  • 1 package shelf-stable potato gnocchi (about 16 oz)
  • 2 Italian sausages (pork or chicken), sliced or crumbled
  • 1 zucchini, chopped
  • 1 bell pepper, chopped (any color)
  • 1/2 red onion, sliced
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 cup shredded mozzarella
  • 1 tsp Italian seasoning
  • Olive oil, salt, pepper

Instructions

Preheat and prep
Preheat your oven to 425°F (220°C).
In a large oven-safe baking dish, toss together the uncooked gnocchi, sausage (sliced or crumbled), zucchini, bell pepper, onion, and tomatoes (with juice).
Drizzle with olive oil, sprinkle with Italian seasoning, salt, and pepper. Mix everything up.

Bake it
Cover the dish with foil and bake for 15 minutes. Remove the foil, stir everything around, and sprinkle the cheese on top.

Finish baking
Return to the oven, uncovered, for 10 more minutes, or until the cheese is bubbly and golden. You can broil for the last 2 minutes if you want it extra toasty.

Serve
Let it cool for 5 minutes, then scoop and serve. It’s hearty, colorful, and makes you feel like a pro without actually doing anything complicated.
